Ethiopia is known as the birthplace of Arabica coffee, and the forested region of Yirgacheffe is the perfect climate to grow high quality coffee with complex flavors. Edido, in Yirgacheffe, produces coffee that is richly floral with intense jasmine and sugary sweet, creating a playful balance of almost tropical flavors. Recently, the Ethiopian government started to allow cooperatively owned coffee processing stations to sell their product directly, which increased traceability (knowledge of a coffee’s origins) and farmer wages. This in turn makes it possible for microlots, or smaller, unique crops of coffee, to be highlighted for their distinct characteristics. We love classic Yirgacheffe coffee for its powerful floral flavors, specifically jasmine and a complementing sweetness, which this lot from Edido provides.
