Coffee production in Costa Rica relies heavily on small farmers and farming cooperatives who produce consistently good coffee with sweet and mild flavors. Growing regions at higher elevations such as Tarrazu are ideal for producing pleasantly crisp coffee with citrus flavors, adding depth to the toffee-like, nutty flavors of classic Costa Rican coffees. To ensure better wages, many small farmers and cooperatives build their own micromills, or small coffee processing centers, to cut out the extra processing fees that would take away from their revenue if they were to bring their coffee cherries to a large third party plant. We choose our Costa Rican coffees for their balance of mellow, sweet notes with citrus acidity, and roast them lighter to bring out every subtle flavor.
