We offer an ever-changing selection of 25 to 30 varieties of coffee beans each week, roasted in small batches with precision and care.
Coffee is a plant! A seed or pit to a red, cherry-sized fruit that is harvested from a bush, coffee is an agricultural product with all sorts of natural complexities. Just like wine varies from region to region and vineyard to vineyard, different coffees have regional flavor characteristics and flavor variances from farm to farm.
We find growers and farms whose attention to detail during growing and milling produces the finest flavor. Our job is to sample and “cup” single origin coffees from around the globe and find the coffee that best represents the distinctive flavor characteristics of a given growing region. We test new beans and invent new custom blends all the time.
We roast in small batches to allow careful control, and develop precise profiles for each type of roast. During the roasting process, coffee beans develop caramelized sugars and oils that ultimately give coffee flavor. Oxygen is the enemy of roasted beans; over time, oxygen breaks down and dries out the roasted beans, resulting in a loss of taste. Freshness equals flavor, and we have the freshest coffee in the Northern Berkshires.
Our coffee is micro-roasted at our North Adams roasting facility at the historic Heritage State Park. We will ship your coffee to you within 12 hours of roasting it, or if you prefer, you can pick up freshly roasted coffee from our Williamstown café. All of our coffee has a roast date and you can always ask about the most recent roast.
